Happy Birthday Drew man!

Dear Drew,
Happy Birthday Buddy! We are SO glad you are in our lives and we can call you our family. :) You are a special young man and we can't wait to see what the Lord does in your life. My birthday breakfast

Justin knows that I LOVE fruit/yogurt parfaits. So he made me a delectable one in a cute glass and let me eat out on the deck with the sun coming up.

More familiy time in FL

Again the beach was great. Couldn't have asked for more fun or relaxation!!

Katie was FEARLESS when it came to the ocean. She literally ran STRAIGHT for the water not minding that the waves were crashing around her and that she could have been pulled out-she had NO reservations. She had the best giggles as she explored the water lapping at her toes. We could have and did watch her for hours.

We had a great time talking and watching all the joy Katie had while there. *Every couple needs time away to grow as a family and as a couple. Wonderful simply wonderful.

Justin and Katie (me too most of the time) daily took walks along the shore- looking for shells, catching baby shrimp (since it is the shrimping capital), feeding the birds and just running along in the waves. There is something special about watching a daddy and his girl.

A birthday date

My birthday day...hours at the beach, resting on the couch to read, walking around Amelia Plantation, getting homemade ice cream and then a date with my love. Nothing beats a day like that!

Thanks Anna (and Joey :) for babysitting! Thankfully Katie had NO problem with us leaving and her staying to play with her friends. She even fell asleep with Kevin, who is Anna's teddy bear. So Sweet!

Our date was to Cafe Karibo and it was SO Yummy! Our appetizer was crab and cheese dip then Justin had a veggie stack and I had delicious crab cakes for our main dish. I so wanted dessert, but I couldn't have eaten one bit of the thick chocolate fudge cake that was on the counter. Finally walked around the cute downtown talking and just spent time being together.

It was a great 31st birthday.

This is my first posted prego photo. I have been on track with this little guy exactly as I was with Katie-weight and carrying low. I am 26 weeks along. Precious times with our second miracle!

The Beach was BEAUTIFUL!

We had a fantastic time at Amelia Island FL last week! It was so so relaxing just to be a family. We had an ocean front condo thanks so much to Anna and her family and we even had a date for my birthday-thanks again guys.

We'd do it again in a heart beat. More photos to come.

We are extremely blessed to be able to go to FL for a few days. Katie is ready with her outfit (thanks Anna). Katie is sure she will see Dolphins and Elephants...we will keep our eyes out!

Katie and Laney have now played together for a bit over a year. WOW, I am so thankful for Hollie that she decided to embark on this adventure of watching each others kids on a weekly basis. It has refreshed my soul, both with Laney over here and when Katie is over there. The best part is that everytime they play it is a hoot-tons of giggling and smiles. We are so blessed to have the Carson's in our lives and want them to know that they are very special friends. These two can have fun in just about any way. Swinging, swimming, jumping, eating...

Laney, I know you are a great friend to KK because now Katie wants to go to your house anytime we drive by the blinking light at 96 and tells me that I should go and do errands. "Come back later, Momma." She doesn't want my playing she wants your sweet fun. You are a a great friend!

Nutrition Moment

Hi all,

It's been a long time since I have posted about how our family food choices have changed over the past two years. But here's one now!

I was making a fruit pizza (YUMMMMMM, I can't wait!!) tonight in preparation for our 4th of July celebration and was using Rapadura. I then thought I would write something small about it. :)

We use Rapadura in place of white/brown sugar. It is unrefined, unprocessed cane sugar which because it is simply processed, is left with a lot of nutrients unlike white or brown sugar. (white/brown sugar is also cane sugar just refined, bleached, processed, etc) Rapadura is dark in color and has a slight molasses flavor, but if I wouldn't of told you, you probably wouldn't even have noticed. It is a great substitute for regular sugar-a one to one ratio and easily adds benefits to sweets. We also use honey or maple syrup to bake with, but that is a bit trickier, ratio wise then Rapadura. So I keep some Rapadura on hand for occasions like this!
