Thai Chicken

I had a friend ask for another recipe that we LOVE around here....especially when it gets warmer and we can grill/saute. So here is our beloved Thai Chicken recipe. Thanks Beth McKenzie for giving it to us years ago. (we might have first tried this in college!)

Thai Chicken
-Chicken, Veggies, Rice, Peanut Sauce

Ingredients for peanut sauce:

1/2 cup water
1/2 cup peanut butter
1/4 cup soy sauce
4 garlic cloves, minced
2 T. honey
3 T. fresh lemon juice
3/4 t. powdered ginger
1/2 t. crushed red pepper flakes-optional (I add only a pinch for a bit of heat)

Directions: place all ingredients in a pan on the stove. Slowly blend/wisk it all together and cook on med heat until smooth and blended.

Grill:
4 Chicken breast
One red pepper, cut into chunks
One red onion, cut into chunks
One package of small mushrooms
One package of cherry tomatoes
-we put all the veggies into a saute pan on the grill, but you could skewer everything)

Directions:
1. Marinate chicken in Italian Dressing for at least 30 minutes.
2. Grill and then cut into strips for serving
3. Grill veggies--If you don't have a grill, saute or roast in oven

Serve over brown rice -chicken and veggies topped with peanut sauce.
The peanut sauce makes the dish!

How funny, friend! We ate that Tuesday night!! I will say, I like to add some coconut milk to the sauce - makes it really creamy! And, if you marinate your chicken for up to two hours in yogurt mixed with curry powder and fresh ginger, it is delicious!! YUMarama!

Is this recipe from the Frese's? I think they were the ones that introduced us to Thai Chicken and this looks like their recipe.
I am on your blog to try and figure out my meal plan this week. :)
