- 1 cup whole wheat flour (I used spelt flour-you can get this at Whole Foods if you want to)
- 1/2 cup oat bran (I used oat flour-rolled oats ground up in my food processor!)
- 1-1/2 teaspoons ground cinnamon
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon allspice
- 1 eggs
- 1/2 cup orange juice
- 1/4 cup heaping sugar (I used honey granules from Bread Beckers)
- 1/4 cup butter
- 1/2 cup mashed ripe bananas
- 1/4 cup and 2 tablespoons chopped walnuts-optional
- Directions:
In a large bowl, combine the first eight ingredients. In another bowl, beat the eggs, juice, sugars and oil. Stir into dry ingredients just until moistened. Fold in bananas and nuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Makes about 12. freeze well. - Seriously DELICIOUS.
